Costco Run!
I'm a big fan of Costco, although sometimes I've got to look at a pile of food and just say "there's no way I'll eat that before it goes bad". This mornings run to the north Austin location provided several vegetarian treats (some that I've gotten in the past, some that I got for the first time on this trip):
Cedarlane bean, rice, and cheese burritos, 8-pack, $10-ish
Morningstar Farms Breakfast Sausage Patties, 24 count, $8-ish
stuffed grape leaves (12 pack?), about $10
Veggie Patch Spinach Nuggets (lots of them)
Pita Pal Trio - pack of Houston, TX-made hummus in spicy, garlic, and basil/sundried tomato varieties - $7.79
Tasty Bite 4-part meal packs, 2 each of Kasmir Spinach and Madras Lentils for $6.89
Tassos Greek Green Olives, stuffed with both jalapeƱo slices and garlic, big jar, $6ish
Costco isn't a purely vegetarian place, but the Austin location does a pretty good job keeping interesting items around. Recommended.

that doesn't seem like a very good deal on stuffed grape leaves, assuming they're your standard dolmas. i've seen cans of 10 for less than $5 (maybe at phoenicia bakery?). you can get them fresh for about that price from tom's tabooleh on guadalupe, and they have a huge variety too (and are a local, very veggie-friendly place to boot).
thanks for the heads up on tasty bite though! since HEB stopped carrying them i've been going to wheatsville and they are so not price competitive on that item anyway. those are my favorite camping foods--you don't actually have to cook them if you don't feel like it and they still taste pretty good. to do the uncooked thing and still have starch, i usually have a cup of crispix to go with. ghetto fabulous!
I am a vegetarian and buy about 19 different items from Pita Pal at Whole Foods here in Houston. It is a local vegetarian company that ships all over the US and Mexico. They have the best hummus that I have ever eaten that was store bought. Their salads and falafel are amazing, too. The falafel and pita pockets are frozen, but everything else is refrigerated. I can get some of their items at Central Market, too, but they are cheaper at WFM.
