I got an email from Patrick Terry, owner of the eponymous P.Terry's Burger Stand, in response to a question about how they make their veggie burgers:

To answer your question, we cook the veggie burgers at the far end of our grill never crossing an invisible line that the cook has. He also uses a separate spatula to pick up the burger. The reason the veggie burger appears at the bottom of the menu is that originally I wasn't going to serve a veggie burger. The menu had already been painted and my wife convinced me otherwise. Good suggestion. Some days we sell close to a hundred. Also you should know that a wheat bun is available as well as grilled onions.

Thanks for the clarifications. When I get back to Austin from my trip, I'll make sure to stop by and pick up another jalapeno and onion burger, this time with the wheat bun.

Since you're already in a dialog, do you mind asking if the buns and patties are vegan? We pass by this place every so often and we'd love to have another stop for fast veg* food.

I'm also curious about the buns and patties... about the invisible grill line... meat is never cooked in that same area?
