I wouldn't recommend Taco Cabana on a regular basis, but they have a few dishes good for vegetarians on the run or out late at night. First, the $.99 black bean taco: flour tortilla, black beans, lettuce, tomato, cheese. For a dollar more, you can get the black bean burrito, which uses a larger tortilla and adds rice. When I go, I tend to get the bean and cheese nachos, with black beans substituted for refried, then I go to their salsa bar and pile on the jalepenos and pico de galla. ($5)

They also have spinach and mushroom quesadillas. They're the only thing I've ever had from Taco Cabana, but they're tasty.

Beware on the rice. I did a bit of research and found several web sites with references that the TC rice is made with chicken stock (except in the Denver area). I coudln't find much new info, but here is one with the reference:

When I called Taco C corporate, I was told that the rice was not vegetarian. This was approx. 1 year ago.
